If you enjoy heavy cheeses like Camembert, Gouda or Manchego, Guibord recommends a full, fruity wine like a Chardonnay, Pinot Grigio or Viognier, which will carry the flavor best. If you’re keen on something lighter like Feta, Goat Cheese or Mozzarella, she believes you should grab an Albariño, Rieslingor the increasingly popular Sauvignon Blanc due to their citrus notes and “mouthwatering acidity that perfectly complements these cheeses.
For that backyard meal like a summer pasta or seafood, she recommends a glass of Vermentino. This particular varietal is fresh, bright, acidic and lemony making it perfect for pasta with pesto and fresh tomatoes or light seafood like Grilled Shrimp.
Sandra warns that most people over-chill their white wines. By taking a bottle of white out of the refrigerator 15 minutes before serving allows the flavors of the wine to come forward and not be overpowered by the coldness.
